I spent years being good at being busy. Veterinary nursing, business administration, personal training, yoga, retail, small business ownership. I collected roles the way other people collect houseplants. I went back to study. Wine Science, of all things. Then fibromyalgia arrived uninvited, sat down on my couch, and made it very clear that the pace I was keeping was not sustainable. So I stopped. I rested when I needed. And, I stubbornly kept going, because that is just who I am.
Wine science taught me something I wasn't expecting. Not just how to taste, though that too, but how to slow down long enough to actually pay attention. To notice the smell before the sip. To sit with something for a moment before deciding what you think of it. Wine has a whole vocabulary built around sensory experience, and studying it properly made me realise that most of us rush through the best parts of our day without registering them at all.
The Gentle Pour started as a wine idea. It still is, at its core. Wine is my study, my passion, and the lens through which I understand flavour, aroma and sensory science. But somewhere along the way, I realised that the same skills that make wine extraordinary apply to every beverage worth drinking slowly. The ritual of making chai on the stovetop. The meditative process of whisking matcha. The first inhale over a properly brewed cup of coffee before anyone has said a word to you. These are all sensory experiences. They all deserve the same attention.
I also wanted The Gentle Pour to be for everyone. Not just wine drinkers. Not just people who drink alcohol. The sober and sober curious deserve intentional rituals just as much as anyone else, and frankly, a beautifully curated cacao or tea box is its own kind of luxury. The slowdown boxes don't include alcohol, which means no licensing headaches and no one left out. The wine education, the courses and the community are all here for when you're ready. But you don't have to drink wine to belong here.
